This coffee, a recent addition to our offerings, has garnered acclaim for its excellence as a single origin, particularly well-suited for espresso.
Hailing from the Afonso Claudio area in the heart of the province of Espirito Santo, Brazil, this lot is a collaborative effort of three dedicated producers. The coffee cherries are meticulously hand-picked at their peak maturity, situated at an elevation of 1000 meters. The harvest period spans from July to December, ensuring optimal ripeness.
Following the harvest, an intensive sorting process takes place to eliminate any overripe or underripe cherries. Subsequently, the coffee beans are fully immersed in water basins for a duration of 24 to 72 hours, effectively removing the pulp.
