Nestled within the stunning Andes Mountains of northern Peru, the Alto Mayo Protected Rainforest is a haven for biodiversity. In 2012, the Alto Mayo Co-op emerged from the aspirations of 12 enterprising young men and 3 young women. Their shared vision aimed not only at crafting exceptional coffee but also at championing environmental preservation and embracing a direct-to-market approach, eliminating the need for intermediaries in the coffee production process.
What began as a modest cooperative has blossomed into a formidable force, with 943 families participating in this collaborative venture. These families are dispersed across 45 distinct production areas within the Alto Mayo region, contributing to a rich tapestry of community-driven coffee cultivation.
This specific coffee undergoes a unique decaffeination process known as the Swiss Water Process. Developed in Switzerland in 1933, this method stands out for its commitment to environmental consciousness. The beans are immersed in hot water for an extended period, a process that efficiently removes caffeine. The innovation lies in the reuse of the water – transformed into steam to complete the decaffeination without resorting to any organic solvents.
